Ingredients
3 eggs
2 ½ cups milk
Salt
250 g flour, sifted
40 g butter, melted
Method
1. Beat egg yolks, add ½ cup milk and salt. Gradually mix in the flour with a wooden spoon. Add butter. Beat until smooth. Gradually add remaining milk and beaten egg whites.
2. Heat a long-handled frying pan, ensuring that the bottom is perfectly smooth and clean. Rub over base of pan with 20 g butter enclosed in a small clean cloth.
3. Use a soup ladle to pour batter into pan. One ladle will be adequate. Cook for 1 minute and flip over. Cook 1 minute more. Slide out of pan onto a flat plate. Stack one on top of another to keep warm. Rub greased cloth over pan bottom before adding batter each time.
4. Place sour cream and caviar in centre of pancake and serve.
