Apple Filling For Pirozhki
Yablochnaya Nachinka
Ingredients
Makes enough to fill 2 dozen pirozhki or 1 pirog.
1½ lb (700 g) tart cooking apples, peeled, cored, and coarsely grated
scant ½ teaspoon cardamom (or less, to taste)
1 tablespoon flour
juice of 1 lemon
1½ oz (45 g) butter
6 oz (170 g) sugar
¾ teaspoon cinnamon
Method
Grate the apples and immediately mix them with the lemon juice in a large bowl. Stir in the sugar, cinnamon, cardamom, and flour. Place a heaped tablespoon of the filling on each round of dough. Top the filling with a dot of butter.
After the dough has been brushed with beaten egg, sprinkle each pie lightly with granulated sugar before baking.
