Apricot Filling For Pirozhki

Ingredients
Makes enough to fill 2 dozen pirozhki or 1 pirog.
1 lb (450 g) dried apricots, cut into fairly small pieces
1 lb (450 g) sugar
Method
Place the apricot pieces in a large pan, and pour in enough water just to cover them. Leave them to soak overnight.
The next day, stir the sugar into the apricots and water. Bring the mixture to the boil over medium heat. Then cook slowly, stirring, until the apricots are soft, about 30 minutes. Cool before using.
