Carrot Filling For Pirozhki

Ingredients
Makes enough to fill 4 dozen pirozhki or 2 pirogi.
6 medium carrots, scraped
4 oz (120 g) butter
1 spring onion, finely chopped
3 slices day-old white bread, crusts removed, crumbled
2 tablespoons snipped chives
1½ teaspoons salt
freshly ground black pepper to taste
3 tablespoons soured cream
6 tablespoons minced fresh parsley
Method
Boil the carrots in salted water until tender, then chop them finely. Saute them for 5 minutes in the butter, along with the chopped spring onion and the breadcrumbs. Off the heat, stir in the remaining ingredients, mixing well.
Leave to cool slightly before using.
