Cold Raspberry Soup

A lush and elegant soup.
Ingredients
1 lb (450 g) fresh raspberries
¾ pint (450 ml) claret
4 oz (120 g) sugar (or more, to taste, depending on the sweetness of the berries)
2 tablespoons sparkling water

Serves: 5
Method
Put 12 oz (340 g) of the berries through a vegetable mill, reserving the rest for garnish.
Stir in the sugar and then add the claret. Chill well.
Just before serving, stir in the sparkling water and the reserved berries. This soup looks lovely when presented in a glass bowl. A dollop of whipped sweet or soured cream may be placed in each portion, if desired. Serve with plain biscuits.
Note:- If fresh raspberries are not available, two 10 oz (280 g) packets of frozen raspberries in syrup may be substituted. In this case, eliminate the sugar entirely.
