Mushroom Filling For Pirozhki

Ingredients
Makes enough to fill 4 dozen pirozhki or 2 pirogi.
4 oz (120 g) butter
6 tablespoons minced fresh parsley
2 medium onions, minced
1 lb (450 g) mushrooms, minced
1 teaspoon salt
Freshly ground black pepper to taste
2 hard-boiled eggs, minced
2 oz (60 g) uncooked rice, cooked according to directions on packet
2 tablespoons fresh dill or 2 teaspoons dried dill
Method
Cook the onion until soft but not brown in the butter. Stir in the mushrooms and saute for 5 minutes more. Off the heat, stir in the remaining ingredients, mixing well. Let cool slightly before using.
