Russian Lemon Soup

An unusual and delightful soup.
Ingredients
2 oz (60 g) uncooked rice
Juice and rind of 1 large lemon
1 oz (30 g) butter
2 pints (1 litre) clear chicken broth
¼ pint (150 ml) double cream
Finely chopped parsley
Lemon slices

Serves: 4
Method
In a medium-sized saucepan cook the rice and the butter in ½ pint (300 ml) chicken broth until tender, about 20 minutes. Stirring the rice with a fork, gradually add the remaining chicken broth. Stir in the double cream and then the finely grated rind and juice of the lemon. (If an even tarter taste is preferred, more lemon juice may be added.)
When the ingredients are well blended, ladle the soup into individual bowls, making sure that some rice is placed in the bottom of each bowl. Garnish with thin slices of lemon and chopped parsley.
Variation:- To serve the soup cold, cook the rice as directed above and then stir in the remaining broth. Chill. Skim off any fat that has hardened on the surface, and then add the cream and lemon juice and rind. Chill well before serving.
