Spring Onion Filling For Pirozhki

Ingredients
Makes enough to fill 4 dozen pirozhki or 2 pirogi.
6 to 8 large spring onions, finely chopped
3 tablespoons fresh snipped dill or 1 tablespoon dried dill
6 oz (170 g) butter
2 teaspoons salt
8 tablespoons minced fresh parsley
Freshly ground black pepper to taste
4 hard-boiled eggs, finely chopped
4 tablespoons soured cream
Method
Saute the spring onion in the butter for 5 minutes. Off the heat, stir in the remaining ingredients, mixing well. Leave to cool slightly before using.
