Walnut-Honey Filling For Pirozhki

An especially good filling for the biscuit dough.
Ingredients
Makes enough to fill 2 dozen pirozhki or 1 pirog.
8 oz (225 g) walnut halves, finely chopped
2 oz (60 g) sugar
¼ teaspoon cinnamon
3 oz (85 g) honey
Grated rind of 1 lemon
Method
Mix together the sugar and honey, then stir in the cinnamon. Add the chopped walnuts and the lemon rind, mixing well. Place a heaped tablespoon of the filling on each round of dough.
