Apple Dumplings

Ingredients

Makes 2 dozen dumplings.

2 medium apples, peeled, cored and finely chopped
1 whole egg, lightly beaten
3 oz (85 g) fine dry breadcrumbs
Juice and rind of 1 lemon
2 oz (60 g) sugar


Method

Pour the lemon juice over the apples to keep them from turning brown. Then gently squeeze them dry. Mix the apples with the lemon rind, sugar, lightly beaten egg and breadcrumbs. Chill in the refrigerator for 20 minutes.


Form the mixture into walnut-sized balls. Bring a large pan of lightly salted water to the boil. Drop the dumplings into the water and boil until they rise to the surface, about 5 minutes. Remove with a slotted spoon.


Cool to room temperature before serving in the soup.
