Cold Fruit Soup With Dumplings
Kholodets Iz Vishen, Grush I Sliv
Unlike the usual clear fruit soups thickened with cornflour, kholodets is a well-textured puree. Served with light apple dumplings, it makes an excellent first course in hot weather.
Ingredients
1 lb (450 g) each apples, pears and plums
3 oz (85 g) seedless raspberry jam
¾ pint (450 ml) cold water
4 oz (120 g) sugar
1 tablespoon freshly squeezed lemon juice
¼ pint (150 ml) sweet white wine
Grated rind of 1 lemon
½ pint (300 ml) cranberry juice
½ teaspoon cinnamon
1 oz (30 g) soft fresh breadcrumbs

Method
Peel and core the apples and pears. Stone the plums but do not peel them. Put the prepared fruit, the water, lemon juice, lemon rind, cinnamon and breadcrumbs in a large saucepan. Bring to the boil and simmer for 20 minutes, until the fruit is soft. Then put through a vegetable mill to puree. Stir in the remaining ingredients. Chill well before serving, garnished with apple dumplings.
