Russian Hamburgers

For a lively variation on the hamburger motif, try adding beetroot and caraway seed to minced beef. These patties are best served rare, and never in buns.

Ingredients

1 medium beetroot
1 teaspoon caraway seed
1 lb (450 g) minced beef (good quality)
½ oz (15 g) butter
1 tablespoon oil
6 spring onions, including the green tops
1 teaspoon salt
Tiny new peas

Method

Boil the beetroot in salted water until tender. Slip off its skin and mince the beetroot. Mince the spring onions. Mix the minced beetroot and spring onion into the beef along with the salt and caraway seed. Shape into 6 oval patties.


In a large frying pan heat together the butter and oil. Fry the patties over medium high heat until they are just done, about 6 to 8 minutes.


Serve garnished with tiny new peas.
