Prunes Stuffed With Cheese

A lovely Byelorussian dessert.
Ingredients
½ lb (225 g) prunes
2 oz (60 g) sugar
½ lb (225 g) tvorog or curd cheese
1 oz (30 g) chopped walnuts
2 tablespoons plum brandy

Method
Pour boiling water over the prunes and soak them, covered, until they are swollen. Drain. If the prunes have not been stoned, carefully remove the stones with a sharp knife, leaving the prunes as intact as possible. Dry them on kitchen paper.
Mix the sugar with the tvorog. With an icing bag, fill the prunes with the sweetened tvorog.
Place the prunes in a lightly greased baking dish. Preheat the oven to 180°C/350°F/Gas 4. Sprinkle the walnuts over the prunes, then bake them for 20 minutes. Remove from the oven and sprinkle with the plum brandy, flaming it if desired. Serve hot.
