Almond Rings
Kol'tso Mindal' Noye

Ingredients

Makes 18 large biscuits.

8 oz (225 g) butter
2 egg yolks, lightly beaten
6 oz (170 g) sugar
4 oz (120 g) finely chopped almonds
2 small eggs
8 oz (225 g) plain flour


Method

Cream the butter and 4 oz (120 g) sugar until light and fluffy. Beat in the eggs, and then stir in the flour. Mix well. Form into a ball and refrigerate the dough for 1 to 2 hours, until firm.


Preheat the oven to 190°C/375°F/Gas 5. On a floured pastry board roll out the dough to ½ in (12 mm) thick. Cut out rounds with a 4 in (10 cm) cutter, preferably a fluted one. Then take a 1 in (2.5 cm) round cutter and cut a hole out of the centre of each round.


Transfer the biscuits to a greased baking tray and brush them with the lightly beaten egg yolks, then sprinkle them with a mixture of the chopped almonds and the remaining sugar. Bake for 12 to 15 minutes, until golden.
