Apple Cake With Chocolate Glaze

Ingredients
¾ lb (340 g) apples, pared, cored, and thinly sliced
3 eggs
8 oz (225 g) sugar
4 oz (120 g) plain flour
¼ teaspoon salt
1 teaspoon bicarbonate of soda
1½ teaspoons freshly squeezed lemon juice
½ teaspoon cinnamon
Glaze
2 oz (60 g) butter
2 tablespoons milk
2 oz (60 g) icing sugar, sifted
2 tablespoons unsweetened cocoa powder
Decorate
Chopped walnuts (optional)

Method
Preheat the oven to 190°C/350°F/Gas 4. Grease and lightly flour a 9 in (22.5 cm) springform tin.
Beat the eggs with the sugar. Stir in the flour and the salt. Dissolve the bicarbonate of soda in the lemon juice and add it to the batter. Stir in the cinnamon, mixing well. Finally, stir in the apples.
Pour the batter into the prepared tin and bake for 1 hour, until browned, or until a cake tester comes out clean.
Prepare the glaze 5 minutes before the cake is removed from the oven. Melt the butter over low heat in a small saucepan. Stir in the milk, icing sugar and cocoa powder. Bring the mixture just to the boil, then remove the sides of the tin and spread the glaze over the top of the cake while the cake is still hot.
Decorate the top of the cake with chopped walnuts, if desired. Cool to room temperature before serving.
