Ingredients
1 lb (450 g) herring, pickled
2 tablespoons snipped fresh dill or 2 teaspoons dried dill
¼ pint (150 ml) olive oil
4 tablespoons red wine vinegar
2 teaspoons sugar

Method
Prepare the herring, cutting it diagonally into 1 in (2.5cm) slices. Mix together the remaining ingredients and pour the sauce over the herring slices. Chill for several hours before serving.
