Marinated Smoked Salmon
Syomga Marinovannaya
Marinating such delectable (and expensive) fish may seem like sacrilege, but the result need only be tasted to prove its worth.
Ingredients
Serves 8 as zakuska.
8 oz (225 g) smoked salmon, in slices
1 large mild onion, sliced and separated into rings
½ teaspoon peppercorns
1 large bay leaf, crushed
¼ teaspoon mustard seed
8 tablespoons olive oil
8 tablespoons vegetable oil
8 tablespoons white wine vinegar
2 cloves garlic, crushed
1 teaspoon salt
Method
In a 1½ pint (900 ml) jar alternate layers of smoked salmon, onion rings, peppercorns, bay leaf and mustard seed.
In a small bowl, thoroughly mix together the oils, vinegar, garlic and salt. Pour the dressing over the salmon layers. Seal the jar and store it in the refrigerator for at least 1 week before serving. Have plenty of black bread on hand to serve with the salmon.
