Braised Beef With Sour Cream
Beef Stroganoff
Ingredients
1 kg rump steak
100 g butter
4 onions, peeled and sliced
500 g mushrooms, chopped
2 tablespoons flour
2 cups sour cream
2 ½ teaspoons mustard powder
2 teaspoons sugar
1 teaspoon salt
1 tablespoon water

Serves: 5
Method
1. Flatten steak pieces with a mallet, then cut into thin strips about 5-6 cm long. Heat butter in a frying pan and brown the onion. Add meat and mushrooms, stirring constantly for 5-6 minutes until meat is cooked. Sprinkle flour over meat, stir-fry for another 2-3 minutes.
2. Stir in sour cream. Turn off heat and let stand.
3. Mix mustard powder, sugar and salt in a small dish. Slowly add 1-2 teaspoons boiling water to form a thick paste, stirring constantly. Add a little more water if necessary and allow to stand for 15 minutes (See Note).
4. To serve, add paste to contents of frying pan and heat. Turn out mixture into a heated serving dish and serve with either potato matchsticks or fried potato slices.
Note:- Allowing meat to stand produces a melding of flavours.
