Fried Herrings

Ingredients
2 salted herrings
2 tablespoons flour
40 g butter

Method
Dip each herring into flour. Melt butter in pan and fry for a minute or two. Turn. Cover with sauce (see following recipes) and serve.
MUSTARD SAUCE - Serves 2
1 onion, finely chopped20 g butter1 tablespoon flour1 tablespoon prepared mustard3 tablespoons sour cream1 sprig fresh dill, finely chopped
Fry onion in butter until soft but not brown. Add flour, stirring continuously. Then stir in all other ingredients and simmer until sauce thickens a little. Pour over herrings.
TOMATO SAUCE - Serves 2
1 onion, finely chopped20 g butter2 tomatoes, skinned and finely chopped2 tablespoons flour1 sprig fresh dill, finely chopped
Fry onion in butter until soft but not brown. Add tomatoes and simmer for 2 minutes to reduce volume. Add flour, stirring constantly until thickened. Pour over herrings.
