Ingredients
¾ cup semolina
3 tablespoons sugar
2 cups milk
40 g butter
2 tablespoons ground almonds
¼ teaspoon vanilla essence
2 eggs
1 tablespoon sugar extra
TO SERVE
50 g blanched almonds
Fresh or canned fruit

Serves: 5
Method
1. Add semolina and sugar to cold milk. Stir well. Bring to the boil. Simmer for about 10 minutes stirring continuously until thick.
2. When cooked add butter, ground almonds, vanilla, and eggs. Mix well.
3. Place into individual baking dishes, sprinkle with sugar (see Note) and bake at 180°C (350°F) for approximately 15 minutes or till golden brown. When baked score the top with a hot skewer.
4. To serve, roast blanched almonds and chop finely. Sprinkle over the top. Serve with fruit and almonds.
Note:- Traditionally this dessert is very sweet and the extra sprinkled sugar is optional.
