Strawberry Kisel
Kisel Iz Klubniki
Ingredients
200 g strawberries
200 g sugar
2 ½ tablespoons potato flour
2 cups water, boiled and cooled

Method
1. Wash and clean strawberries removing any damaged parts. Place in a bowl, pour on sugar and refrigerate for a few hours.
2. Strain through a sieve, mashing pulp with the back of a spoon. Reserve the juice and discard remaining pulp.
3. Dissolve potato flour in water in a saucepan and bring to the boil, stirring. Add strawberry juice. Bring to the boil again stirring constantly till slightly thickened. Pour into individual serving dishes to set and serve with extra strawberries.
