Spicy Pork And Lemon Grass
Ingredients
1 clove garlic, chopped
2 shallots, chopped
3 tablespoons chopped lemon grass
1 tablespoon sugar
1 tablespoon fish sauce
Salt and freshly ground black pepper
350 g (12 oz) pork fillet, cut into small, thin slices
2-3 tablespoons vegetable oil
2-3 sticks celery, thinly sliced
115 g (4 oz) straw mushrooms, halved lengthways
4 small red chillies, seeded and shredded
2 spring onions, shredded
1 tablespoon soy sauce
About 55 ml (2 fl oz/ ¼ cup) stock or water
2 teaspoons cornflour
Coriander sprigs, to garnish

Method
Using a pestle and mortar, pound the garlic, shallots and lemon grass to a paste. Transfer to a mixing bowl and add the sugar, fish sauce, salt and pepper. Blend well, then add the pork slices , turning to coat them with the mixture, and leave to marinate for 25-30 minutes.
Heat oil in a wok or frying-pan and stir-fry pork slices for 2 minutes. Add the celery, straw mushrooms, chillies, spring onions and soy sauce and stir-fry for 2-3 minutes. Use the stock to rinse out the marinade bowl and add to the pork. Bring to the boil. Mix cornflour with 1 tablespoon water and add to sauce to thicken it. Garnish with coriander sprigs and serve at once with a mixture of rice and wild rice.
