Charouf Bil Pisselli O Chedra
( Lamb With Kishke And Peas )
Ingredients
1 cup loosely packed parsley leaves
1 cup loosely packed celery with leaves, chopped
2 medium onions, sliced
1 masran (kishke-see basic recipes)
6 cups, water
2 lb lamb chops (or shanks) with bone and cut into 3 pieces
1 lb fresh or frozen green peas
1 teaspoon, salt
½ teaspoon, pepper
¼ teaspoon cinnamon, ground
¼ teaspoon turmeric, ground
2 medium (½ lb) potatoes, peeled and quartered
Details
Serves: 8
Method
Chop parsley, celery and onions together in a food processor or by hand.
Cook masran (already cooked for 1 hr) and all other ingredients with just enough water to cover them, in a covered pan over low heat for 1-½ hrs more. Serve warm.
