Greens With Coconut Milk
Ingredients
¾ cup water
1 lb fresh collard greens cleaned and chopped or 10 oz pack frozen chopped colla, thawed
1 medium onion, peeled and chopped
3 large tomatoes, cubed
1 cup coconut milk, canned
Salt

Serves: 5
Method
In a large saucepan, bring water to a boil over high heat. Add collard greens, reduce heat to low, and simmer for 4 to 5 minutes.
Add onions, tomatoes, coconut milk, and salt and stir well. Cook, uncovered, 20 minutes more. Serve hot.
