Spinach Stew
Ingredients
¾ cup vegetable oil
1 small onion, peeled and cubed
1 small tomato, cubed
3 oz tomato paste
1 lb fresh spinach, cleaned and chopped or 10 oz pack of frozen chopped spinach, thawed
1 can corned beef (12 ounce)
1 teaspoon red pepper, ground
1 teaspoon salt

Serves: 5
Method
In a large frying pan, heat oil over medium heat for 1 minute. Add onions and saute until transparent.
Add tomatoes and tomato paste and cook for 5 minutes. Add remaining ingredients, cover, and cook for 30 to 35 minutes over medium-low heat. Serve over rice.
