Fruit Compote With Lichee Nuts
[Madagascar]
Ingredients
1 cup fresh pineapple, cut into 1" dice
1 cup cantaloupe, cut into ½ " dice
1 cup oranges, peeled and thinly sliced
½ cup strawberries, sliced
½ cup lichee nuts, canned
½ cup sugar
½ cup water
¼ teaspoon salt
2 tablespoons lemon juice
2 tablespoons vanilla

Method
In a 2 quart bowl, combine the pineapple, cantaloupe, orange, and strawberies and stir to combine. Sprinkle the lichee over the top. In a small sauce pan, combine the sugar, water, salt, and lemon juice and stir to combine. Bring to a boil and boil hard for 1 minute. Stir in the vanilla. Pour the hot syrup over the fruit.
Chill in the refrigerator for 1 hour. If you wish, when you serve the salad you can sprinkle a few drops of vanilla over individual servings.
