Sesame Roast Potatoes

An exciting and elegant variation on the usual roast potato.

Ingredients

4 baking potatoes, about 175 g/6 oz each, peeled and halved lengthways
4 tablespoons olive oil
2 tablespoons sesame seeds
Salt

Method

1 Place the potatoes cut-side down. Using a sharp knife, make cuts at 5 mm/¼ inch intervals along the length of each potato almost through to the base, so that they just hold together.


2 Heat the oil in a roasting tin in a preheated oven, 200°C (400°F), Gas Mark 6, until hot. Add the potatoes to the tin and spoon the oil evenly over each one. Roast the potatoes for 30 minutes. Baste well and sprinkle with a little salt, if liked.


3 Sprinkle the potatoes with the sesame seeds and cook for a further 30 minutes or until the potatoes are golden brown and crisp. The cuts will open out a little during cooking to make a fantail shape.

Oven temperature: 200°C (400°F), Gas Mark 6
