Bechamel ( White Sauce ) For Moussaka Or Macaroni Pie

Ingredients

2 tablespoonfuls of good butter
2 heaped tablespoonfuls of flour
˝ litre of milk
2 eggs
200 grms of grated cheese (kefalotiri)
A little salt

Details

Preparation time: 18 minutes


Method

Put the butter in a small saucepan to melt. Add the flour, stirring quickly with a wooden spoon to prevent lumps forming. Pour in the milk after having warmed it slightly first, and then add the cheese and salt, stirring the mixture constantly.


When it thickens, remove from heat and allow to stand for one or two minutes. Beat the eggs and pour them slowly into the mixture, stirring continually. The sauce is ready for use.


Before it is baked with the moussaka or macaroni pie, sprinkle it with grated cheese to produce a crunchy surface.
