Tomato And Pasta Salad
Orecchiette are small ear shaped pasta. If they are not available, gnocchi pasta shapes (dumplings) will work just as well.
Ingredients
550g/1¼lb fresh orecchiette (ears)
Dash of olive oil
450g/1lb red and yellow tomatoes, chopped
15cm/6inch piece cucumber, chopped
175g/6oz feta cheese, chopped
5tbsp chopped fresh coriander
2tbsp chopped fresh basil
For The Dressing:
15ml/1tbsp white wine vinegar
60ml/4tbsp olive oil
2 cloves of garlic, crushed
Salt and freshly ground black pepper
To Garnish:
Cherry tomatoes
Fresh coriander sprigs

Method
Bring a large saucepan of water to the boil and add the orecchiette with a dash of olive oil. Cook for about 5 minutes, stirring occasionally, until tender. Drain and rinse under cold running water. Drain again and set aside.
Place the orecchiette in a large mixing bowl and add the remaining salad ingredients. Mix to combine. To make the dressing, place all the ingredients in a screw-top jar and shake well. Pour the dressing over the salad and toss to coat. Serve garnished with cherry tomatoes and coriander sprigs.
