Tortellini, Peppers And Pine Nut Salad
Red peppers can be used instead of chilli peppers, if you prefer. For best results allow the salad to chill for at least an hour before serving.
Ingredients
275g/10oz fresh tortellini
Dash of olive oil
1 onion, very finely sliced
1 green pepper, seeded and very finely diced
75g/3oz toasted pine nuts
1 red chilli pepper, seeded and sliced (optional)
10cm/4inch piece of cucumber, very thinly sliced
1 orange, peeled and very thinly sliced
For The Dressing:
60ml/4tbsp olive oil
30ml/2tbsp sweet soya sauce
30ml/2tbsp vinegar
Salt and freshly ground black pepper

Method
Bring a large saucepan of water to the boil and add the tortellini with a dash of olive oil. Cook for about 4 minutes, stirring occasionally, until tender. Drain and rinse under cold running water. Drain again and set aside.
Place the tortellini in a large mixing bowl and add the remaining salad ingredients. Toss together lightly.
To make the salad dressing, place the ingredients in a screw-top jar and shake well to combine. Pour the dressing over the salad, toss and serve.
