Ingredients
1 lb. 2 oz. (3 cups) soft (light) brown sugar
½ pint (1¼ cups) milk
2 tablespoons (3 tablespoons) butter
Pinch salt
1 teaspoon vanilla essence
Pinch cream of tartar
2 oz. (½ cup) nuts, chopped

Method
Combine the sugar, milk, butter, salt and vanilla essence in a 3 quart heat resistant bowl. Cook on HIGH, stirring occasionally, until the sugar is dissolved, about 5 or 6 minutes.
Stir well, then continue cooking until a sugar thermometer registers 240°F, 115°C, when a teaspoonful of the mixture dropped in cold water will form a soft ball.
Stir in the cream of tartar, then beat vigorously until the mixture is thick and creamy. Stir in the nuts and pour the mixture into a buttered 9 inch square tin. Cut into cubes when cold.
