Lemon Filling
Ingredients
Filling for one 8 or 9 inch cake
6 oz. (¾ cup) sugar
1½ tablespoons (2 tablespoons) cornflour (cornstarch)
Generous ¼ pint (¾ cup) water
3 tablespoons (¼ cup) lemon juice
½ teaspoon grated lemon peel
2 egg yolks, lightly beaten
1 oz. (2 tablespoons) butter
Method
Blend the sugar, cornflour and water together in a large heat resistant bowl. Stir in the lemon juice and peel, and cook on HIGH for about 3 minutes until the mixture clears. Stir every 30 seconds.
Mix 2 or 3 spoonfuls of the mixture with the eggs, then return it to the mixing bowl. Stir and continue cooking for 1 minute, stirring again after 30 seconds. Add the butter and leave to cool for several minutes before using as a cake or pie filling.
