Coconut Muesli With Papaya

Ingredients
1 small ripe papaya
2 tbsp (30 ml) unsweetened flaked or shredded coconut
1½ cups (375 ml/50 g) multigrain flakes
¾ cup (175 ml/200 g) kefir (health-food stores) or low-fat yogurt
Pinch ground ginger
Pinch ground cinnamon
1 tbsp (15 ml) pear nectar

Method
Peel the papaya, cut in half and remove the pit. Cut half the fruit into thin slices and dice the remainder.
Brown coconut in a dry nonstick skillet (frying pan). Combine with multigrain flakes and papaya in two small bowls.
Combine kefir, ginger, cinnamon and pear nectar. Pour over muesli and garnish with papaya slices.
TIP:- Muesli ensures a good start to your day. If you buy prepared muesli, read the list of ingredients carefully. Avoid muesli that contains added sugar of any type.
