Whole-Grain Muesli With Apricots And Yogurt

Ingredients

3 tbsp (45 ml/30 g) wheat berries
2 tbsp (30 ml) water
⅓ cup (75 ml/100 g) low-fat yogurt
1 tsp (5 ml/15 g) liquid honey
1 tsp (5 ml) unsweetened sea buckthorn or cranberry juice (health-food stores)
2 dashes liquid sweetener
¼ cup (50 ml/20 g) dried apricots
½ orange
1 tsp (5 ml) chopped bittersweet chocolate

Method

Coarsely grind the wheat berries, stir in the water and soak overnight, covered, in the refrigerator.


In the morning, stir in yogurt, honey, sea buckthorn juice and sweetener until smooth.


Cut apricots into fine strips. Combine with wheat-yogurt mixture.


Peel the orange, removing the white pith, and cut into bite size pieces. Combine with muesli.


Spoon muesli into two small bowls. Garnish with chocolate and serve.
