Orange Marmalade Loaf

Ingredients

3 oranges
3 eggs
150 g (6 oz) butter or soft margarine
150 g (6 oz) soft brown sugar
275 g (10 oz) self-raising flour
1 teaspoon ground mixed spice
4 tablespoons coarse-cut marmalade
100 g (4 oz) walnut pieces
75 g (3 oz) mixed dried fruit
4 glacé cherries, quartered

Method

1 Grease and line the base of a 900 g (2 lb) loaf tin.


2 Squeeze the juice from 1 orange and put it in a food processor with the eggs, butter or margarine, sugar, flour, spice and 2 tablespoons of the marmalade. Process the mixture for 1 minute.


3 Remove the mixing bowl from the food processor and then stir in the walnut pieces and dried fruit. Spoon the mixture into the pre­pared loaf tin and level the surface, using a spatula.


4 Place in a preheated oven, 160˚C (325˚F), Gas Mark 3, for 45 minutes, then cover with foil to prevent burning. Cook the cake for a further 30 minutes, or until it is well risen and a skewer inserted into the centre comes out clean. Turn out and cool on a wire rack.


5 Rub the remaining marmalade through a sieve into a small saucepan and discard the peel. Add 2 tablespoons (30 ml) of water and gently melt the marmalade over a low heat to make a glaze.


6 Using a sharp knife, peel and thinly slice the remaining oranges, remove any pips and poach in the marmalade mixture for 2-3 min­utes. Remove the orange slices and set aside.


7 Brush half the marmalade glaze over the cake. Arrange the orange slices on top of the cake, overlap­ping slightly, and brush with the remaining glaze. Decorate with the glacé cherry quarters.

COOKING TIME: 1 HOUR 20 MINUTES
OVEN TEMPERATURE: 160˚C (325˚F), GAS MARK 3
