Orange Marmalade Loaf
Ingredients
3 oranges
3 eggs
150 g (6 oz) butter or soft margarine
150 g (6 oz) soft brown sugar
275 g (10 oz) self-raising flour
1 teaspoon ground mixed spice
4 tablespoons coarse-cut marmalade
100 g (4 oz) walnut pieces
75 g (3 oz) mixed dried fruit
4 glacé cherries, quartered

Method
1 Grease and line the base of a 900 g (2 lb) loaf tin.
2 Squeeze the juice from 1 orange and put it in a food processor with the eggs, butter or margarine, sugar, flour, spice and 2 tablespoons of the marmalade. Process the mixture for 1 minute.
3 Remove the mixing bowl from the food processor and then stir in the walnut pieces and dried fruit. Spoon the mixture into the prepared loaf tin and level the surface, using a spatula.
4 Place in a preheated oven, 160˚C (325˚F), Gas Mark 3, for 45 minutes, then cover with foil to prevent burning. Cook the cake for a further 30 minutes, or until it is well risen and a skewer inserted into the centre comes out clean. Turn out and cool on a wire rack.
5 Rub the remaining marmalade through a sieve into a small saucepan and discard the peel. Add 2 tablespoons (30 ml) of water and gently melt the marmalade over a low heat to make a glaze.
6 Using a sharp knife, peel and thinly slice the remaining oranges, remove any pips and poach in the marmalade mixture for 2-3 minutes. Remove the orange slices and set aside.
7 Brush half the marmalade glaze over the cake. Arrange the orange slices on top of the cake, overlapping slightly, and brush with the remaining glaze. Decorate with the glacé cherry quarters.
