White Sauce
Ingredients
Makes ½ pint (1 cup)
1 oz. (2 tablespoons) butter
1 oz. ( ¼ cup) flour
½ pint (1 cup) milk
Salt, pepper
Method
Put the butter in a large heat resistant bowl and cook on HIGH for about 30 seconds until the butter is melted. Blend in the flour, stirring until smooth, then cook for a further 30 seconds. Gradually stir in the milk, then cook for 2½ -3 minutes until the sauce thickens. Stir occasionally. Add salt and pepper to taste. Increase the quantity and lengthen the cooking time slightly if a thinner sauce is required.
This sauce can be used as a basis for endless variations. Try the following suggestions:
Cheese sauce - add 1-2 oz. grated cheese.
Egg sauce - add 2 chopped hard boiled eggs and 1 teaspoon lemon juice.
Onion sauce - add 1 tablespoon chopped onion.
Mushroom sauce - add 2-3 tablespoons cooked, chopped mushrooms.
