Metheglin 1
Ingredients
6 lb. honey
1 oz. hops
Mead yeast
1 gallon water
½ oz. root ginger
Method
Gently simmer the hops and bruised ginger in the water for two hours, skimming if necessary, and adding more water to restore the original volume. Strain the hot liquid on to the honey, stir until dissolved and when cool add the yeast culture. Continue as directed for Sweet, Still Mead 1. The ginger may be omitted if not liked.
