Wholewheat Bread

Ingredients

Makes 2 loaves

1 oz. (1 cake) fresh yeast
¾ pint (2 cups) milk
1 tablespoon salt
1 oz. (2 tablespoons) butter
3 oz. (¼ cup) black treacle (molasses)
1½ lb. (6 cups) wholewheat flour


Method

Dissolve the yeast in 3 tablespoons (¼ cup) water. Add the milk, salt, butter, black treacle and wholewheat flour. Knead well, adding more flour if necessary to prevent the dough from sticking to the hands. Put the dough in a large buttered bowl covered tightly with plastic film.


Cook on MEDIUM for 30 seconds to speed rising. Remove from the oven and leave until the dough has doubled its size. Knock back and shape into 2 loaves. Press each loaf into an ungreased 8 x 4 inch glass loaf pan. Cover and leave to rise for 15 minutes.


Cook separately on HIGH for 6-8 minutes, giving the pan ¼ turn every 1½-2 minutes. Brown on all sides under the grill.
