Creole Sauce
Ingredients
Makes 1 pint (2½ cups)
2 oz. (½ cup) onion, chopped
1 oz. (¼ cup) green pepper, chopped
1 oz. (¼ cup) celery, chopped
1 oz. (2 tablespoons) butter
1 tomato, peeled and chopped
8 oz. can tomato sauce
3 oz. can mushrooms, undrained
¼ teaspoon salt
Pinch of garlic powder
Method
Combine the onion, pepper, celery and butter in a large heat resistant bowl. Cook uncovered for 4 minutes until the vegetables are tender.
Stir in the remaining ingredients. Cover and cook for a further 5 minutes. Serve on cooked fish or vegetables.
If canned tomato sauce is unobtainable substitute 4 tablespoons (⅓ cup) tomato puree blended with ¼ pint (⅔ cup) water.
