Blanquette Of Veal

Ingredients

½ lb. boneless veal (shoulder or breast), cut into 1 inch cubes
1 oz. (½ cup) button onions, peeled
1 carrot, peeled and cut into ½ inch slice
Bouquet garni
1 teaspoon butter, softened
2 teaspoons flour
3 tablespoons (¼ cup) single (light) cream
Salt, pepper

Method

Combine the veal, ⅓ pint (¾ cup) water, onions, carrot and bouquet garni in a large heat resistant bowl. Cook covered on HIGH for 20 minutes. Skim. Remove bouquet garni, stir and continue cooking on HIGH for 8 minutes. Transfer the meat and vegetables to a serving dish.


Blend the butter and flour together, add to the liquid and cook uncovered on HIGH for 4 minutes until the sauce has thickened. Stir every minute. Add cream, salt and pepper and pour the sauce over the meat.
