Mackerel In Cider
Ingredients
2 small mackerel, gutted and cleaned
1 tablespoon chopped onion
1 tablespoon chopped fresh parsley
½ pint (1¼ cups) cider
1 tablespoon lemon juice
Salt, pepper
1 teaspoon butter
1 teaspoon flour

Method
Place the mackerel side by side in a heat resistant casserole. Mix the onion, parsley, cider, lemon juice, salt and pepper together and pour over the fish.
Cook on HIGH for 6 minutes, giving the dish a quarter turn every 1½ minutes. Lift the mackerel onto a serving dish and cover. Strain the liquor into a heat resistant bowl.
Blend the butter and flour together and form into a ball. Stir into the liquor. Cook for 1-2 minutes, stirring every 30 seconds until the sauce thickens. Pour the sauce over the mackerel and serve at once.
