Apple-Celery Root Salad
Ingredients
2 small apples
1 small celery root
Juice of ½ lemon
1 tsp (5 ml) cider vinegar
1 tsp (5 ml) walnut oil
2 tbsp (30 ml) slivered almonds

Method
Halve and core the apples. Peel the celery root and remove any tough parts. Set aside a few leaves from the top for garnishing. Coarsely grate or julienne the apples and celery root.
Combine lemon juice, vinegar and walnut oil, and drizzle over the apples and celery.
Toast the almonds in a dry nonstick skillet on medium heat until golden. Coarsely chop the celery leaves. Sprinkle both over the salad and let stand for 10 minutes.
TIP:- The salad will taste better if you use tart or spicy apples such as Granny Smith, Golden Delicious or russet.
