Soup - Samla Prahet Kroeung

Ingredients

150 g prahet (minced fish)
150 g pumpkin leaves
4 cups water

Kroeung:
⅓ cup lemon grass leaves
1 tbsp rhizome
1 tbsp galangal
4 shallots
2 cloves garlic
Zest of kaffir lime
1 tbsp salt
1 tbsp sugar
1 tbsp fish sauce
1 tbsp prahok


Method

Divide the kroeung into 2 equal portions. Mix one half with the prahet, and season with half the salt and sugar. Then dip your fingers into vegetable oil and mould the prahet into balls. Set aside. Boil the water, add the prahok and the rest of the kroeung. When dissolved add fish balls to the soup and cook for 10-15 minutes. Then season with the rest of the salt and sugar and the fish sauce. Finally, add the pumpkin leaves, remove from heat and serve immediately.
