Spinach Salad Wraps

Ingredients

8 slices bacon
20 mushrooms, stems removed
2 onions, sliced
4 (10-inch) spinach flour tortillas
2 tablespoons apple cider vinegar
½ teaspoon curry powder
Salt to taste
Pepper to taste
1 (10-ounce) package fresh spinach, washed and stems removed

Method

Arrange the bacon in a shallow baking pan. Top with the mushrooms and onions. Roast at 400 degrees for 5 minutes. Turn the bacon and stir the mushrooms and onions. Roast for 5 to 7 minutes longer or until the bacon and mushrooms are cooked through. Remove from the oven and set aside. Turn off the oven. Wrap the tortillas in foil. Place the wrapped tortillas in the oven to warm.


Combine the vinegar, curry powder, salt and pepper in a bowl and mix well. Add the bacon, mushrooms, onions and spinach and mix well.


Spoon equal amounts of the spinach mixture onto the center of each tortilla. Roll to enclose the filling, tucking in the ends.
