Greek Salad Wraps
Ingredients
2 large tomatoes, cut into wedges
½ small red onion, sliced
1 cucumber, thinly sliced
4 ounces kalamata olives
8 ounces feta cheese, crumbled
1 cup olive oil
¼ cup red wine vinegar or lemon juice
1 teaspoon oregano
Salt to taste
½ head romaine lettuce, shredded
6 tortillas

Method
Combine the tomatoes, onion, cucumber, olives and half the cheese in a bowl and toss to combine. Combine the remaining cheese, the olive oil, vinegar, oregano and salt in a food processor or blender and process until smooth. Pour ½ of the dressing over the vegetable mixture and mix well. Combine the remaining dressing with the lettuce in a bowl and toss to combine. Add the vegetable mixture to the lettuce and mix well. Spoon an equal amount of the mixture onto the center of each tortilla. Roll to enclose the filling, tucking in the ends.
FOR A TREAT, YOU MAY SUBSTITUTE 6 PITA BREAD ROUNDS FOR THE TORTILLAS IN THIS RECIPE. WRAP THE PITAS IN FOIL AND WARM AT 300 DEGREES FOR 15 MINUTES. CUT A SLIVER OFF THE TOP OF EACH PITA BREAD AND SPOON EQUAL AMOUNTS OF THE SALAD MIXTURE INTO EACH PITA BREAD POCKET.
