Apple Cranberry Wraps
Ingredients
2 Granny Smith apples, thinly sliced
½ cup sweetened dried cranberries
1 teaspoon sugar
Cinnamon to taste
1 teaspoon lemon juice
Butter or margarine
6 (10-inch) flour tortillas
8 ounces cream cheese, softened
¼ cup confectioners' sugar
½ cup caramel sauce
½ cup chopped walnuts, toasted
Vanilla ice cream

Method
Toss the apples, cranberries, sugar, cinnamon and lemon juice together in a bowl. Melt butter in a large nonstick skillet over medium heat. Add the apple mixture and sauté for 5 minutes or until tender. Spread a thin layer of butter over 1 side of each tortilla.
Combine the cream cheese and confectioners' sugar in a bowl and beat until blended. Spread the cream cheese mixture evenly over the unbuttered side of each tortilla. Top with the apple mixture. Roll to enclose the filling.
Cook the wraps in a skillet over medium heat for 2 minutes on each side or until golden brown. Drizzle with the caramel sauce. Sprinkle with the walnuts. Serve each wrap with a scoop of ice cream.
