Roasted Garlic Toasts
Barbecuing garlic in its skin produces a soft, aromatic purée with a sweet, nutty flavour. Spread on crisp toast to make a delicious starter or accompaniment to meat or vegetable dishes.
Ingredients
2 whole garlic heads
Extra virgin olive oil
Fresh rosemary sprigs
Ciabatta loaf or thick baguette
Chopped fresh rosemary
Salt and freshly ground black pepper

Method
1. Slice the tops from the heads of garlic, using a sharp kitchen knife.
2. Brush the garlic heads with extra virgin olive oil and add a few sprigs of fresh rosemary, before wrapping in kitchen foil. Cook the foil parcels on a medium-hot barbecue for about 25-30 minutes, turning occasionally, until the garlic is soft.
3. Slice the bread and brush each slice generously with olive oil. Toast the slices on the barbecue until crisp and golden, turning once.
4. Squeeze the garlic cloves from their skins on to the toasts. Sprinkle with the chopped fresh rosemary and olive oil, and add salt and black pepper to taste.
