Citrus Kebabs
Serve these succulent barbecued chicken kebabs on a bed of lettuce leaves, garnished with sprigs of fresh mint and orange and lemon slices.
Ingredients
4 chicken breasts, skinned and boned Fresh mint sprigs, to garnish
Orange, lemon or lime slices, to garnish
FOR THE MARINADE
Finely grated rind and juice of ½ orange
Finely grated rind and juice of ½ lemon or lime
30ml/2 tbsp olive oil
30ml/2 tbsp clear honey
30ml/2 tbsp chopped fresh mint
1.5ml/¼ tsp ground cumin
Salt and freshly ground black pepper

Method
1. Use a heavy knife to cut the chicken into 2.5cm/1in cubes.
2. Mix the marinade ingredients together in a large mixing bowl, add the chicken and cover with clear film. Leave to marinate for at least 2 hours, or overnight in the fridge.
3. Thread the chicken on to metal skewers and cook on a medium barbecue for 10 minutes, basting with the marinade and turning frequently. Garnish with mint and citrus slices.
