Apple Coleslaw
There are many variations of this traditional salad; this recipe combines the sweet flavours of apple and carrot with a hint of celery. Prepare the salad in advance and chill until needed.
Ingredients
450g/1lb white cabbage
1 medium onion
2 apples, peeled and cored
175g/6oz carrots, peeled
150ml/5fl oz/⅔ cup mayonnaise
5ml/1 tsp celery salt
Freshly ground black pepper

Method
1. Remove the outer leaves from the white cabbage and, using a heavy knife, cut it into 5cm/2in wedges. Remove and discard the stem sections.
2. Feed the cabbage wedges and the onion through the slicing blade of a food processor. Change to a grating blade and grate the apples and carrots. If you do not have a food processor, use a vegetable slicer and a hand grater.
3. Combine the salad ingredients in a large mixing bowl. Fold in the mayonnaise and season with celery salt and freshly ground black pepper.
Cook's Tip:- This recipe can be adapted easily to suit different tastes. Add 125g/4oz/½ cup chopped walnuts or raisins for added texture, or, for a richer, more substantial coleslaw, add 125g/4oz/½ cup grated Cheddar cheese.
