Tomato And Feta Cheese Salad
Sweet sun-ripened tomatoes are rarely more delicious than when mixed with feta cheese and olive oil. This salad can be served with any barbecued meats, fish or vegetables.
Ingredients
900g/2lb tomatoes
200g/7oz feta cheese
120ml/4fl oz/½ cup olive oil
12 black olives
4 sprigs fresh basil
Freshly ground black pepper

Method
1. Remove the tough cores from the tomatoes with a small kitchen knife.
2. Slice the tomatoes thickly on a chopping board and arrange the slices in a wide-based shallow dish.
3. Crumble the feta cheese over the tomatoes, sprinkle with olive oil, then sprinkle with olives and fresh basil. Season with freshly ground black pepper and serve at room temperature.
Cook's Tip:- Feta cheese has a strong flavour and can be very salty. For an authentic flavour and texture, look out for Greek, Cypriot or Turkish feta.
